Chef excellence on display at Ultimate Chef Challenge

Last week, the 7th Annual Ultimate Chef Challenge showcased our chefs’ culinary skills by balancing exceptional flavors with nutritional guidelines as outlined by the Northwell Healthy Choice nutrition criteria, ultimately raising the bar to change the way people think about hospital food.

Team Pineapple was truly together with registered dietitians to win the competition by creating an appetizer, entrée and dessert that not only met the Healthy Choice criteria, but yielded great flavors and presentation, all of which can be brought back into the kitchen to enhance food experiences for our patients, visitors and employees. The recipes all met sodium and fat guidelines that are heart healthy.

This year’s National Nutrition Month theme, “Go Further with Food,” gave chefs and dietitians the ideal platform to exemplify the health system’s Food and Nutrition Transformation – to serve people food that tastes good, is good for you and supports the environment. Each team was challenged to incorporate a mystery basket of ingredients — kale, fennel and red bell pepper — to their dish. The variety of interpretations using the ingredients showed the range of creativity of our chefs, and those recipes will also be available soon.

Entrée – Seared Bay Scallop, Roasted Fennel Citrus Salad
Dessert – Banana Strawberry Zabaglione
